Order a delicious salmon!

The Salmo Salar Irish salmon we offer at Christmas and Easter is of the highest quality. It is caught at sea in still unpolluted waters and has a low fat content. It is imported fresh, direct from Switzerland, by the O'Connell family, who for generations have specialized in fishing and smoking salmon. The fish is trimmed and then salted (not with brine, which swells the fibers and artificially increases the fish's weight to the detriment of quality, but with crystallized sea salt).

For preservation, traditional smoking is employed (forgoing the addition of coloring and preservatives, as well as other modern methods that shorten this crucial stage). The fish is given time to soak up the smoke from the oak wood burned in the kiln, giving the salmon a subtle flavor, while respecting its authentic taste.

M. O’Connell est engagé dans une économie solidaire en faveur de l’éducation et de la culture. Ainsi le prix de vente de CHF 85.- /kg permet un revenu juste et le versement du bénéfice soit CHF 25,5 CHF /kg à l’école Rudolf Steiner de Confignon, pour le soutien de sa pédagogie.
